    Savory Salmon Loaf

    I was close on this recipe but not quite. I use saltine crackers instead of breadcrumbs. And used fresh chopped tomatoes instead of stewed tomato. Also just made half of order and split that into two small loaves since one small loaf is plenty for the two of us

    It came out great. I couldn't help myself and dropped in a touch of cayenne. This dropped my Mr. Suchafuss score to a 7. He said it hid the salmon too much. I thought that would be a plus for him as he doesn't like salmon. That is paprikas sprinkled on top, not Cayenne.

    I'm like Bakerme. I've make salmon patties often but have never considered a salmon loaf. It does look good. Did you make that sauce that goes with the loaf? Good call on fresh tomatoes.

    Wow, that looks delicious! I think I'd skip the sauce, too. It looks like it turns out like a chunky tomato sauce but I think something different than that would be better with salmon.
