Cheflette's Stuffed eightball zucchini

    I was given about 25lbs of MONSTER sized zucchinis, yellow squash, and a squash thing that looks kinda like a big yellow mushroom. Anyway, this is what I made with one. I got 6 of these from 1 zuk. I didnt have any bread crumbs and needed more filling so I used some leftover rice (which I always have) I was also out of parm cheese so I used shredded jack/cheddar and dont have any fresh parsley so I subbed spinach. Mixed and as a topper. Dont know if I should rate it since I subbed quite a few ingredients, but this was really good as is. Woulda tossed in some leftover chicken but a little pudgy doggie cleaned me out

    I think its OK to rate a recipe if you've made a couple of changes and still liked it. I don't think its really fair to change things up and then say you hated it. But, that's my personal thoughts.
    Hey, I have a little pudgy doggie who loves chicken! He helped me with some chicken tenders for lunch yesterday. Those little pudgy doggies love their chicken! :-D

I must keep an eye out for them since they are in season here. I like your subs also and agree you should rate it if you liked it and also post a new recipe. Go for it! Truth be told, I was in the process of making stuffed zuks and thought to look here for a recipe close to what I was doing. I pictured "eightball" squash just meaning after it was made it would be the shape of an eightball. The zuk I started with was about 22" long and 5" diameter. I cut 6 pucks this size out of it and removed the seeds steamed for 15 min to soften. Then made the stuffing and filled and baked for 30 min. I thought about posting the recipe, but there are SOOO many stuffed zukes here already.....

    And as for little pudgy doggies. I feel its my responsibility to keep them happy and pudgy. There is just something about their pudginess that makes ya smile. Plus they kinda waddle like a duck. Who doesnt like that??????

    I was thinking like Frankie, after I googled it that the yellow mushroom one was a scallop squash. They are little and used for grilling alot. Now I really don't know?
    When you google squash many kinds come up and the will identify most of the pics. A very good learning experience in here. I might venture out and try some new kinds now. Thanks guys:-)
