  A very nice switch up to the usual mayo based potato salad. The use of Italian dressing along with the colorful peppers makes this potato salad as visually pleasing as it is zesty.

  It was funny. No one at the party would eat it. When I asked if anyone had tried I got responses like, "I don't like mayo". When I told them there was no Mayo in it they went, "Well then" . Ended up being a hit with folks asking for the recipe.
  
  My brother-in-law says I shouldn't call it potato salad, "Its too misleading". Of course Mr Smartypants wasn't forthcoming with any name suggestions.

  My husband hates mayo too...but loves it in potato salad...and could eat it that way all day....i know he's weird ;-) This recipe sounds great and yes made this way we call it Italian potato salad as well!
