Cherry Cheesecake Brownies

    Researched a recipe for ricotta, cream cheese, and yogurt to help clean out the fridge.
    Interesting texture. It's wobbly coming out of the oven but toothpick test comes out clean. It's springy when cooled.
    Chocolate bottom is chocolaty but the upper half doesn't really taste like Cheesecake.
    It's slightly sweet and overall a good flavor. I have some cheesecake flavoring I'll use next time.
    Don't have my spelt flour set up yet so used AP flour.
    Opened up a bottle of refrigerator cherry jam I made last week to add to the yogurt.
    Ground up some tapioca to make the tapioca flour.
    Overall a good recipe.

    Another tofu recipe, huh? It looks tasty, pso. Is tofu something new for you or am I just noticing it lately?

    It's new. I've made a couple of recipes with it. Have 4 oz left over from this recipe and am looking at an apple loaf recipe, but also need some Kasha (buckwheat) which is difficult locating so far. I may sub some quinoa, which I have, instead of locating and buying a pound of the Kasha.

    Texture is more cake like than fudge like in consistency.
