    I've made this before but never linked it back to IMI. I used a Cornish game hen this time around and used my cast iron grill skillet, thus the grill marks.

    I think between having it flat and pressed down with the brick, it cooks quicker. My game hen was done in 35 minutes, which is pretty quick for a whole game hen. The skin does get nice and crispy, too.

    I think you said you have the same pan as me before. It's the Le Crueset braiser, Caribbean blue. My lighting in my kitchen did not do the color justice, made it look more dull!
