Chickpea Pizza by Otterpond

    I have made this several times and love it! When you pair it with a salad, it is a quick, easy dinner to make for mid-week when you are tired and out of leftovers from the previous weekend (I like to do most of my cooking on the weekends, since I have more time).

    The variations I have made include marinating 1/2 cup cut up tomatoes, 1/4 cup sliced mushrooms, and green onion (to your taste), 2 tablespoons minced garlic, and 1 teaspoon pesto, in 2 tablespoons olive oil and 1 teaspoon Balsamic Vinegar while the flour sits for the 30 minutes, and then adding the rosemary and a little peasto into the dough right before you put it in the pan to cook. I also added real cheese instead of soy cheese - an Italian blend works nicely.

    I like the idea of spicing up the dough Angel. Hadn't tried that yet. I have been painting the dough with seasoned oil before doing the bake thing. Great idea.
