Chorizo de Puebla

    first time making homemade chorizo, because I was always under the impression that "had" to be one of those several day, very involved processes. Apparently, I was wrong. This was so good and while it didn't taste exactly the same as some of the commercial brands I've gotten, it tastes a LOT like some others. :) That's the issue... they all taste different, anyway, sometimes drastically. This was better than most I've purchased myself, second only to those I've been served by a Mexican cook!

    I used it to make a new stuffed pablano recipe, first, but it will be used again, soon!

    as written? Oh yes. :) but, you just need to cut way back on the peppers, either the number or their spiciness and switch some of the ground red pepper to chili pepper, but NOT the entire amount, that wil taste too much like chili sausage :)

    Sounds great. I was wondering if you stuffed it into casings. I think that is what always makes me think I can't do sausage. Its not the sausage just the casing I'm not up to. Thanks for bringing this to our attention. The way the recipe is written boosts my confidence.

    I feel the same way Otter! I like the idea of no casing! Much easier!

    nope, I didn't do casings... I have the ability to do sausages with my Kitchen Aid, and I have done, but sometimes it's just not worth the time and effort. I'm far from lazy, but I have my limits of what is "worth it" for me :) But, this is just great...and, since I use chorizo almost exclusively ground, I didn't care that it be linked or cased.

    I will likely smoke this when I make it, again, for completeness' sake, but made as it's written was really good and great in those peppers.
