Coconut Crunch Cookies

Pleclare's cookies are now a family favorite. The coconut in these add so much! It makes the cookies moist and chewy and the sugar on the coconut add a caramelized crunch to the bottoms when they're baked. So good. My husband loved these and he's very careful about regulating his sweets (as a diabetic) but he found these too tempting!
