    Colorful Carrot And Ham Salad

    FANTASTIC use of the chunk of ham that had made its way to the back of my freezer and had been forgotten about until I saw this recipe that I had bookmarked some time ago.
    I mixed my slightly abbreviated version last night and ate it as a sandwich with leaf lettuce on whole wheat bread this noon. The carrots add a really nice bit of texture to the smooth ham spread. I skipped on adding the radish and celery and as it's cold and windy today (altho sunny and lots of natural light shining out there - notice the beam of light I sent your way, ML2C) I didn't want to brave the elements to see if I could still rummage up some chives from my herb garden.

    I also wrapped up the small amount remaining in a lettuce leaf. It's a tasty treat that way, too, for those avoiding carbs...

    So happy you enjoyed it! My MIL got me into ham salad and it's the reason I went out and bought a grinder! i have a couple other ham salads I make often that I think I'm gonna post soon.

    To bad I didn't have any cooked dishes ready earlier when that ray of light came through ;)

    Thank you both! :) It was a great tasting sandwich, and I ate the leftovers on multigrain crackers. Not bad that way, either.
