    Corn And White Bean Soup
    from Sabrinarose

The end result for me was a bit bland and I added oregano and garlic after tasting to boost the flavor. I WOULD recommend this recipe to others, though, because it's so quick and easy to make.

I had about 1 1/2 cups shredded cooked chicken to be used, so I only used 1 can of Great Northern beans instead of the 2 in the original recipe. Unfortunately, I had only one can of green chilis on hand, so in went some jalapeno sauce to up the chili pepper flavor. I only used 1 cup of frozen corn - 2 cups just seemed to me to be more than was needed. For anyone using bottled juice instead of fresh lemon/lime, 2-3 tablespoons of each would be an approximate equivalent.

I served the soup over crunched-up tortilla chips and topped with cheddar-jack cheese. Made with a few changes, this was a very tasty white chicken chili-style soup.

Thank you Sabrinarose for a great base recipe!

Great looking recipe!!! Good call on the oregano and garlic. I always find myself adding more seasoning but we are a family that like BIG flavors, so it's not meaning the recipe is not good.

    LOVE the picture...so pretty ;)

Thanks so much ML2C for taking a look at it... I am into BIG flavor too so felt kinda bad about giving this recipe a rating of only "4" - because someone else might not think it's bland at all...

Thanks, Frankieanne. Those were multi-grain tortilla chips that I used in the pic. I like them...have you ever tried them?

No, I haven't! I never even heard of such a thing. But, I haven't bought tortilla chips in a while. I'll have to look for them.
