Crock-pot Stewed Tomatoes And Chicken

Recipe by Donman: Crock Pot Stewed Tomatoes And Chicken
Quick to go together. A different flavor from other marinara sauces. Chicken was moist with a dry component. Think I would cut back on the LOW crock time to keep the breasts moist all the way, or remove them from the crock before adding the tomato paste and going to HI for an hour. Which, by my crock-pot, didn't sufficiently thicken the sauce. I transferred the sauce to the stove top to simmer thicken it whilst the pasta water was coming to a boil. Eventually added 2 tablespoons of corn starch to finish thickening it to my liking as the pasta was coming ready.
Added more salt to the sauce.
Did not use any cayenne pepper, as some of my family have soft mouths. As it turns out, it probably wouldn't have hurt to add the pepper. Maybe half of it next time and the full-monty after that. We have to creep up on spicy-hot foods in this household.

    Pointsevenout,
Thanks for trying it. I agree with you about it being a little watery. I'm still kind of new at this. I don't understand about the chicken being dry though. Mine was so moist and tender that it fell apart with the fork. I love the thickness of your sauce. That is what I was trying to achieve. The pepper did step it up just a notch. Thanks for your feed back. I'll try the corn starch next time.
Again, thanks got trying it :)

Meat that is cooked in a lot of liquid, as in this recipe, tend to be on the dry side because liquid draws out a lot of the natural juices. I don't have a technical or scientific explanation.
Dry meat is the biggest objection to white meat of those that prefer dark meat because of it. I'm not one of them, btw.
I've had far dryer results with chicken than this recipe. Just thought I should point out all my observations. Could be the difference in our crock pots too.

Thanks for the reminder. I can't find flavored tomato paste in this stix town. Had to use straight up tomato paste. As a matter, yours is the first recipe I've run across to ask for flavored tomato paste.
