This recipe was recommended to me after I bought a bunch of cauliflower on sale. I’m not one to make fancy vegetable dishes, but this was well worth the effort. I’m always a little nervous using flour in cheese sauces because I think it gives it a grainy texture. I did not find that to be the case at all. It was very smooth and silky. Once assembled in the dish, I sprinkled the top with panko bread crumbs and placed under the broiler until golden brown. It was excellent! The Dijon mustard only gives it a hint of flavor and does not over power the cheese sauce. I would note that the sauce alone would be wonderful poured over broccoli or even asparagus. My written review:

"So smooth, so silky, and absolutely wonderful! The hint of Dijon mustard transcends this cheese sauce to a whole new level. It’s easy to see why you would serve with crusty bread. You wouldn’t want to miss a drop of sauce! Plus, it’s rich enough to stand on its own as a complete meal. Thanks, Don, for sharing your amazing recipe!"

This is such a delicious dish! Made it today to take to our family Easter get together and everyone LOVED it!!! So good and like DIZ my sauce was creamy and grainy free :) For the cheese I used Don's recommendation of 1/2 cheddar and 1/2 parmesan. Thanks Don for a great new way to have cauliflower!!
