Easy Spanakopita Style Sandwiches

Ugh, I've had the longest day and am just now getting around to finally posting this. Made this yesterday for lunch and it was SOOO good! I used fresh spinach, grated fresh nutmeg and fresh oregano, all just because I had it. I used a nice wheat bread from the bakery section and colby jack cheese. The feta was my favorite flavor in this sandwich, went so well with everything. I haven't had a grilled cheese in a long time, so this was a great treat :)

Yes DIZ, I like to dig around for different and interesting recipes :)
Shona, I put raw spinach in a grilled cheese/panini, but never cooked so this was new to me, loved the feta in this!

Not at all! That, blue cheese, Stilton, etc. are my husband's favorites, but I can't stand the stuff - haha! Give me a mild baby Swiss, provolone, or Havarti and I'm a happy camper!
