English Muffin Breakfast Pizza

We had these for dinner! I used black bean refried beans and made my own salsa, more like a pico. For the the adults muffins I used chipotle gouda and over easy eggs. For the kids I used cheddar and scrambled :) So good, and a wonderful mess to eat if you just pick it up and start shoving it in your mouth like I did :) My husband was more patient and used a knife a fork lol! Reminded me of eating at this Mexican food restaurant we go to when visiting with my Aunt. They serve breakfast and put refried beans in everything! :)
