Fluffy Eggless Pancakes

    Interesting recipe. Has a slight baking powder taste.
    Batter gets thickly full of air because of the interaction of the tiny amount of vinegar with the baking soda component in the baking powder. Also gets additional rise from the heat while on the griddle.
    Needs more cook time than standard pancakes so the cake will be stiff enough to flip over. It will be doughy if you don't.
    Does not bubble up as a standard pancake but when it starts puffing in the pan it's just about ready to flip.
    Cake does turn out nice and fluffy to suck up a lot of syrup.
    I timed it at 3 1/2 to 4 minutes a side.
    Pics turned out dark. Someone else will have to make some.
