Greek Yogurt Pancakes

    Found out I prefer spoon eating vanilla flavored yogurt over plain. So I found a recipe to incorporate this plain yogurt.
    First thoughts were, "my, this batter is on the thick side". Was thinking about watering the batter down just a little. Turned around a couple of times preparing the omelet pan for frying up the cakes and noticed the batter was puffed and full of holes, like what baking soda would do when activated. Strange for a pancake batter. Must be the acidity of the yogurt that set off the soda in the baking powder.
    Cakes puffed up even more when fried, making for a very puffy looking cake, but deflated just a little on the plate waiting for the next cake to fry. Three minutes on the first side and 2 on the second makes it done.
    Made 5 omelet pan size cakes. Very good flavor. Outrageously good with butter and peach topping.

I like the idea of the brown sugar. I've never seen that before in a pancake. I may have to try these! Thanks for pointing them out, pso!
