Grilled Garden Veggies

    This was absolutely delicious and wish I would have made more so I could have had it for lunches! I cut this recipe WAY back and only used one VERY large tomato (the one that was in my avatar) one large squash, instead of zucchini, 1 Japanese eggplant and 1 purple onion. I lost a few slices of the eggplant in the cooking process, darnit! I did not measure out the balsamic, just drizzled it in and used about 5 chopped basil leaves and 3 cloves roasted garlic which is a must in this dish, good stuff, like candy!! Served it all up over some brown rice. Definitely making this up again soon!

    I used to have a propane grill but it died on me so I switched back to charcoal. I think I prefer the charcoal.

    Thanks Marie! Although I do LOVE charcoal, if we do get a new grill I would like to have an optional propane/charcoal along with a smoker on it :) :)
