Halibut with Roasted Poblano Cream

    Another “company’s coming” recipe! This is a recipe that speaks to my style of cooking. Amazing flavor brought together by a few simple ingredients. Don’t forget easy. I love easy! Halibut is a very mild white fish and one of the few that I really like. I served it with new potatoes as recommended and it was a good choice. We used them to mop up every bit of cream sauce. Hubby even went back for more potatoes and scraped every bit of sauce from the skillet!

    I have to confess that I was disappointed in the sauce, even though I’m raving over it. Why? Well, I’m the one that messed it up. I let the onions get caramelized and also cooked the cream too long so it was too thick. Part of the problem was the poblano. It didn’t have any flavor. I kept simmering hoping it would draw out that “tingling” spiciness that I love about poblanos. It just didn’t happen. One of the down falls from using fresh produce because quality can vary with seasons. I ended up with a super sweet caramelized onion sauce that took away from the halibut. Even though we liked it, we both agreed it would be superb if it was less sweet, backed up with some spice, and not as thick. I’m anxious to make this again only next time I will follow the instructions for cooking the onions and hope for a hotter poblano. Due to the price of halibut, I think I will use cod which is another wonderfully mild white fish. Thank you for sharing Luisascatering! You have some amazing recipes!

    Thank you, Frankieanne! Halibut is terribly expensive and hard to find here. Miss the days when we lived in Alaska and caught our own. One fishing trip would fill our freezer for a year with plenty to give away.

    Thank You, Bakerme! Have you ever tried poblanos? I can't really do spicy either, but I can eat those. They have a different kind of spiciness. Just for a change of pace, I will use them in fajitas instead of green bell peppers.

    I have no idea what a poblano is! Even when I've tried things that friends say has very mild spice, it's too much for me :(

    I have never liked fish, but this sauce sounds really good - I like a little spice, but not a lot, but I was thinking this sauce might be good on grilled chicken breasts as well?
