    I must say this is an excellent moist and delicious apple cake!I used Northern Spy Apples in this as they are my favourite cooking apple. The poster was right on the mark when she said that this was a very thick batter and almost on the dry side when mixing it. I was concerned about that at first but the apples and juice from them sorted that out. I cut the sugar back to 1/2 cup as she had mentioned it was O.K. I baked it in a 9 inch by 9 inch pan and it was perfectly done in 45 minutes. This would be good at anytime with ice cream or even with slices of cheese and it is first-class just by itself either warm or cold. A nice and handy easy recipe. I will definitely be making this again and again:)

    G4U, that looks awesome. I have never heard of Northern Spy Apples. There are soooo many types. I can never remember. I know I like Pink Lady and Fuji the best for eating......but thats all I can ever remember
