Happy Bottoms Apple Cake Recipe
This quick and easy apple cake recipe came from my paternal grandmother, Gladys, and it's the only one I will eat or bake. It doesn't need frosting but a cream cheese frosting on it is magnificent.

Ingredients
  • 4 cooking apples, cut up
  • 1 cup sugar (I normally use 1/2 to 3/4 cup and Splenda works well, also)
  • 1 cup flour, sifted
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 egg
  • 4 Tbsp oil
  • Dash of salt

Directions
  1. Mix all ingredients well in a large bowl and put in a greased pan. The batter will be thick and might look a bit on the dry side but if the apples are juicy, the cake will be very moist.
  2. Bake at 350 for 45 minutes.

Elle, let me know if you try and like this one. My sisters and I were so spoiled with it that every other apple cake just pales in comparison. It's so cheap to make, too! :)
