Hearty Peach And Blueberry Muffins

    I have needed to make a batch of muffins for a long time now. These will be great to grab quick in the morning, and they taste so good! Not overly sweet either. 1 peach equaled almost a cup diced. Didn't have the almond extract so I just added extra vanilla. Delicious muffins and healthy too!

    Super looking pic! I have been eying this one for awhile now and I might give it a whirl. Chia seeds are readily available here in, Health Food Stores in packages or in Bulk. They don't have much taste to them and you can add them to almost anything. I like the way Shona gave the option of using an egg instead of them for people who can't find them or don't want to use them. A really great way of getting a very healthy snack!

    I just made them last week and used all white flour because I was out. I was out of chia seeds too, so I used an extra egg. I also used canned peaches, lol, a very versatile muffin!
    I never thought to look in the bulk aisle either! I get them in a little bag in the health food aisle at my local grocery store. They may seem a little pricey but a little goes a long way. I use Chia seeds in smoothies and to thicken soups and stews as well. It helps regulate blood sugar, so my dad who is diabetic puts Chia in his 3 main meals a day now!
