Herbed Roast Pork Loin and Potatoes

    Posted by Grizzlybear. This recipe was delicious. Had a 3 lb. roast and cooking time and seasonings were right on. The only thing I would do different is do potatoes seperately at a higher heat. We like the potatoes crispier. It was a wonderful dish....

    It is a delicious roast. I opted for the minimal bake times to keep the temp at 145 degrees to keep the roast from drying out. It was very moist and juicy. One of the better loin roast I have made.
