    I really liked using honey in this way. My bird was big and it wasn't done in the allotted time so I had to stick it back in for another 20 minutes. It got a bit dark but not that burnt. A smaller chicken would probably be a lot better for this recipe. I didn't measure the herbs - just grabbed a handful from my garden and I used the whole lemon. Basted the honey on the chicken three or four times. I lined my roasting pan with foil and was very happy that I did. I had a nice piece for dinner last night and another tonight (good cold!) and am shredding up some more for a baked chicken chimichanga recipe I will try tomorrow night.

    I hardly ever buy whole chickens anymore. I try to only buy stuff when its on sale and now, for some reason, the sale chickens are two to a package. That's the one thing that irks me about grocery stores. They do not consider single people at all! And, I'll bet you there are a lot more single households out there than there used to be!
    Whew, I'm ranting. Must have been that spicy chimichanga I had for dinner. :-P
