How to make it

  • Marinade the chicken with salt and pepper, rubbing inside and outside of chicken. Set aside for 2 hours.
  • Stuff lemon, herbs in the chicken cavity.
  • Preheat oven and roast chicken breast side down at 375 degrees basting occasionally for 25 minutes. Brush with some honey.
  • Turn breast side up and roast at the same temperature for 20 mins.
  • Brush some more honey as need.
  • Turn temperature up to 425 degrees and roast to brown the chicken for 10 mins.
  • Rest chicken in tented foil for 10 minutes before carving.

    Delicious and simple recipe for roasted chicken! Mine needed a bit more time (about 20 mins) but I think it was bigger than the one called for. It's so comforting making a roasted chicken so thanks for the great recipe!! Honey Herb Roasted Chicken

    I loved the nice crispy sweet skin and the breast meat was very flavorful from the herbs. Mine took 20 minutes longer but that was because it was a 4.5 pound chicken. I also used the whole lemon because I didn't know what to do with the other half. Added a couple of pictures, too.
