Honey Herb Roasted Chicken

- 2 to 2.5 kg chicken, cleaned and dried shopping list
- 2 tsp salt shopping list
- 1 tsp pepper shopping list
- 1/2 lemon, sliced shopping list
- 1/4 c fresh parsley shopping list
- 1/4 c fresh rosemary shopping list
- 1/2 c honey shopping list
How to make it
- Marinade the chicken with salt and pepper, rubbing inside and outside of chicken. Set aside for 2 hours.
- Stuff lemon, herbs in the chicken cavity.
- Preheat oven and roast chicken breast side down at 375 degrees basting occasionally for 25 minutes. Brush with some honey.
- Turn breast side up and roast at the same temperature for 20 mins.
- Brush some more honey as need.
- Turn temperature up to 425 degrees and roast to brown the chicken for 10 mins.
- Rest chicken in tented foil for 10 minutes before carving.
