Hot and Spicy Pineapple Pork

Is the amount of vinegar and chicken broth switched around? I love the taste of vinegar, but I was afraid to use 1 1/4 cups!

Here's what I did: I drained the juice from a 20 oz can of pineapple. It was almost 1 cup, so I added water to make up the difference. I added 1 tsp of chicken seasoning and about 1/4 cup cider vinegar. Same amount of everything else. Used water chestnuts and green onion for the veggies.

Served over rice it was a REALLY tasty and complete meal. Mine was only moderately hot and spicy as I just used crushed red pepper flakes.

I KNOW I'll be making this again! :)

Wow, good catch on that. It does look like those ingredients must have been reversed. Gorgeous picture. I love water chestnuts! Yum.

Thanks, you 2, for your comments! I have plenty of leftovers, mr p. If you can work out some sort of a "beam the plate up" plan I'd be happy to share. :)

Holy! That looks delicious! Good catch on the vinegar and thanks Peeta for the revision. The water chestnuts seem like such a great crunchy addition to the cashews! I think I would even double up on the sauce to throw in some broccoli to make this a family meal!

ML2C, I used 1 cup of liquid plus the 1/4 cup vinegar and with any less than that the cornstarch would have thickened the sauce too much. I thought that ratio was just about right, but the sauce is very tasty so more for the rice would be a great idea...

I don't usually use water chestnuts in stir-fries, don't know why cuz I like them, but I'm really glad I did in this one. Thanks for looking at the recipe, it's a good one!

ML2c, is there a "cow" or "guacamole" or "moly" or "Stir Fry, Batman" missing after that "holy"? Or is this a new phrase for the IMI peoples : )

Lol! When I get frightened, excited, astonished or just found a giant mess on the floor one of the kids made I always just yell out holy! Probably keeping me from yelling s*it after it ;)
