    Hungarian Onion Bread

Loaf baked up well with great oven spring. Made this into a hand kneaded using the food processor. Baked at 350 for 30 minutes. Might use 5 more minutes to brown it up nicely. Used a 8 1/2 x 4 1/2 loaf pan. Could have used a 9x5 considering all the oven spring.

Didn't use all the water spec'ed. Used 1/3 c for yeast bloom and only half of the remaining water to hydrate the flour. Don't see any ill effects.

Yes. The loaf turned out quite tall. I'll make it in a larger loaf pan (9x5) next time.

It went a little prune on me after it cooled off but is very soft to the touch. Never had a loaf of bread do that before.
