    Recipe by jamaicamoons: Italian Sausage Manicotti
    My first manicotti. Very delicious. It's a little messy stuffing the manicotti but you gotta get into your work sometimes.

    I would add half a pound more sausage to make the stuffing work out right.

    Basic Italian Marinara Sauce by Jrt_mom and Creamy Dreamy Alfredo Sauce by Jo_jo_ba were the toppings for the stuffed manicotti. No store bought stuff here.

    Mother's not to keen on this dish so I guess I'll just have to finish it myself. The sacrifices I make!

    That looks mouth watering! I make my own manicotti crepes...so much easier to fill a crepe than a pasta noodle. Its much cheaper also! If you want, I could give you the recipe.

    6 eggs, 3 cups cold water, 3 Tbls. corn oil, 1/4 tsp. salt, 3 cups flour.

    Mix all ingredients together to make a very liquidity batter.
    Pour 1/4 cup of the batter for each crepe, into a hot , 8 inch non stick fry pan - very lightly oil pan only for the first crepe.
    As soon as you pour the batter in the pan, lift pan off the heat and tilt pan to spread the batter evenly and thinly around the entire bottom on the pan.
    As soon as the batter starts to look dry and the edges are easy to lift, turn it over.
    Cook the other side for about 10 seconds, just to dry it, then remove from pan and set aside. You can stack them ontop of each other while you make all of them.
    Repeat process for remaining crepes. This recipe makes about 22 crepes. You can easily cut this recipe in half.
