Jimrug1's Spicy Grilled Shrimp And Melon Salad

    Oh my goodness! I made Jim's salad last night. It's makes for a gorgeous, flavorful, sexy and eye-catching plate and the combination of flavors play off of each other perfectly.

    I marinated the shrimp while at work and came home and grilled them off over charcoal. Grilling and cooling the shrimp in their shells really intensifies their flavor and makes them so succulent - you won't believe the goodness and juiciness.

    I also prepped my melons the night before, so it made the final prep fairly easy.

    Don't be afraid of the heat. If you're a chile head like me, you'll fall in love with it. If you want to back it down a notch or two, use a few less chiles in the toast/grind step.

    It works in a big way and I will be making and serving this salad again and again. As I said in my review at Jim's recipe, this would make the perfect date dish. Impressive to serve or cook it together. Maybe serve it with watermelon margaritas...how delightful.
