Ingredients

How to make it

  • In a bowl or large Ziplock bag, combine Oil with ground Chile, Cilantro, Garlic, Lime juice, and Salt. Add Shrimp and marinate 2 - 3 hours at room temp or overnight in the refrigerator.
  • Combine Melons, Mint, Sugar, Lime Juice, and Vinegar. Refrigerate for at least 30 minutes.
  • Remove Shrimp from Marinade and pat dry w/ paper towel. Reserve Marinade. On a HOT Grill, Grill Shrimp for about 3 minutes. Set aside to cool.
  • Toss the Romaine with 3 - 4 Tbls of the reserved Marinade just to coat. Make a bed of greens on each plate.
  • Drain the Melons slightly. Peel Shrimp and toss in some of the reserve Marinade.
  • Arrainge Melons and Shrimp on Romaine..

    Ohhhh baby, I made this tonight and it is wonderful! I put the shrimp in the marinade this morning and let it go while I was work, then grilled them off on soaked skewers when I got home. Let them cool in their shells before peeling and it does make them so juicy and tender.

    I really love the textures and flavor combination. The bite of the cripy romaine, danced lightly in the spicy shrimp marinade. The sweet, minty and vinegar/citrus melon pairing. Add the fiery and succulent heaven of the peeled shrimp. It's like giving your mouth a love letter of flavor. And don't be afraid of the heat the Chiles de Arbol bring. It's nicely cooled by the melon...perfect.

    Plus, it's a sexy, gorgeous, colorful and appetizing presentation. This would make a GREAT date offering. Just sayin'...who wouldn't be thrilled to be served this beauty?

    Jim, I love watermelon and have been eating watermelon,radish, mint, and feta/with red onion for a week (dressed with balsalmic, olive oil, lime zest and a drizzle of honey). I never thought of adding shrimp, grilled shrimp would make it sublime. Oh, I'll be a rock star when I serve this......next chance I get. Bravo

    How delightful, Jim! Oooh, I love the flavor combination. The minty coolness of the melon with the sweet, citrus, vinegar dressing paired with those spicy, hot, succulent, grilled shrimp.
