Judys Fried Chicken Tenders Creole Style
I picked up something yesterday called "thin sliced breast fillets" because I had a coupon. I'm not much a breast person as I prefer thighs. I decided to try this one with them. I only used half of the package which amounted to 1/2 of a pound. I had a lot of flour mix left over even though I quartered the amounts! I threw a lot away and doubt as much is needed as stated. I used Cajun Seasoning as I didn't have Creole. Googled both and no one seems to know if there is a difference anyway. Used my electric skillet and very little oil as they were so thin. Pretty good stuff! Served them with baked oven fries, which look a lot like the tenders. :)

One has more heat and the other has more spice. Nice looking tenders.

    Thanks, pso. They were tasty.
I googled homemade creole and cajun seasonings. Of the ones I looked at, they were quite the same except one of them (can't remember which) had more paprika. Next time I go to the grocery store, I will see if there is a bottled Creole seasoning and compare them.

Those really look good Frankie. Can you just use a bit of oil for this. I see you used minimal. 1 Tbs?

Oh and is a tender just a thinly sliced breast?

You could slice up a breast to suffice or use the breast tenders. Breast tenders are a small muscle located under the breast muscle closer to the breast plate. They should cost a little less than the price of the breast muscle in the store.

Thanks, MrP. I sliced the breasts I had into strips of about 1" or so. When I said minimal, I meant they weren't swimming in oil. I used my electric skillet and barely covered the bottom of the pan with oil. The oil didn't even make it into the corners. It would depend upon the size of your pan as to how much that would be.
