Key Lime Pork Roast

  This had so much flavor!! I have a bunch of key limes from my lime tree to use up and this was perfect!!! I didn't have but about 1 1/2 Tbs of ginger but it still tasted great!!! The garlic really comes through in this. I left out the red pepper flakes so my daughter who is wimpy to any kind of spiciness would eat it.
