KEY LIME PORK ROAST This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Brown Estate in Wylie, Texas in 1988.

Ingredients
  • 2 pounds boneless pork loin
  • 1/3 cup key lime juice
  • 3 tablespoons brown sugar
  • 1 white onion chopped
  • 3 tablespoons ground ginger
  • 4 cloves garlic minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 3/4 teaspoon freshly ground black pepper

Directions
  1. Trim fat from pork roast then cut roast in half horizontally across the center.
  2. Combine all remaining ingredients then place roast in plastic bag and pour marinade over.
  3. Refrigerate 30 minutes then preheat broiler and place meat 7” from heat and broil 30 minutes.
  4. Turn roast and baste every 10 minutes then discard unused marinade.
