Lime Chicken Tacos

The best chicken tacos I've made...

I started with cooked chicken (frozen drumsticks) that I removed from the bone before adding the other ingredients. I did veer from the recipe as far as topper ingredients - I used avocado, salsa, queso fresco cheese and more green onion.

If you like chicken tacos, you need to try this!

I dont know what queso fresco cheese is but have several other type. Looking at this is making me hungry. And its lunch time too ..................One question ......... With the diminishing "natural light" did you have to use artificial light for this pic : )

Thank you Mr. P. for the comment and compliment. I'm sure any other type of cheese that you have and like on tacos will be just fine. I know you like wrapping things in tortillas, but this would make incredibly tasty nachos, too.
And as for natural light, we're not completely immersed in the dismal days of winter, YET. In fact, with the reflection of the sun's rays on snow, the sun might shine as brightly for us as for you in sunny California... :P

Thank you, Frankieanne. Yes, they are quick to make starting with cooked chicken. I'd recommend them to anyone who likes or wants to try chicken tacos. The combination of the red wine vinegar & lime juice is fantastic.

Are you seeing more winter birds now? Guess I'll bring in my hummer feeder for the season today. Supposed to have widespread frost tonite and I haven't seen any evidence of byrds now for at least a week.

Hi Gk! To be honest I've been so busy lately the only birds I've really noticed out at the feeders have been chickadees, bluejays and woodpeckers. I've got to get my suet feeder up this weekend. Took the hummingbird feeders down about a month ago. We've had a couple of hard frosts as well. Hoping I get some cardinals over the winter just to brighten things up. Have a good one! :)

Yeh we do get a bit of sun here : ) Its supposed to be in the high 80's this weekend. But I would LOVE to get snow in the winter. I LOVE snow. But Im sure thats because I rarely see or get it here. Some day I would like to have a white Christmas One year I came close, but it snowed the day after : ( Not here though. I was up at a friend of the family's cabin.
