Lemony Chicken Thighs With Super Crispy Skin

    I picked this recipe because I pulled out my thighs kind of late so I couldn't make a recipe called for marinating time. So the first part of the recipe went great, got my skin nice and SUPER crispy, never flipping my chicken which I assume I was supposed to do. Then I get to the adding the lemon part, and although the recipe instructions never said to remove the chicken, and add some of the lemon slices on bottom then put the chicken back on, it suggest later in the recipe that that should have been done. So that's what I did, then did the oven time to finish off the chicken. Pulled out the chicken when done and the skin wasn't crispy anymore from the lemon juice being baked out of the lemons. Still really tasty though and the sauce made from the chicken sauce was delicious! Liked this method of cooking chicken but next time either sprinkle the lemon slices just over top or only cook in the sauce to give off the lemon flavor.

    I always render the fat off chicken skin the same way before cooking it in the oven. :) The rest of the instructions do sound terribly confusing......At least it tasted good! :)

    That recipe sounds delicious and I love your photo! I didn't read the recipe the way you did though. I read it that you were just to scatter the lemon slices into the pan and on top of the chicken but not move the chicken. The lemon slices that are sitting on the bottom of the pan will caramelize. The only time you move the chicken is when you make the sauce at the end. That was my take anyway!

    Thanks everyone :) When it reads "scatter half the lemons over top of the chicken and half on bottom of the skillet" is where I got confused. How can I get them on the bottom of the skillet with the chicken taking up the bottom of the skillet? Oh well, turned out great anyway :)

    haha I guess the instructions should read "Leave room in the bottom of your skillet for the scattering of lemon slices later on." :-D The recipe does look delicious!

    Awesome photo, Mommyluvs2cook! I like your addition of mushrooms. Your photo and the recipe look delicious, but the directions seem a little confusing to me, too, especially the parts about on and off the stove and in and out of the oven. I was getting dizzy from reading them and had to keep going back and reading them again.
