Maine Baked Beans With An Italian Touch

Recipe by Chefmeow: Maine Baked Beans With An Italian Touch
What a waste of beans and other material!
Five hours of baking then two hours stovetop simmering still yielded crunchy beans.
I don't recommend this recipe to anyone!

Hmmm. I've always cooked dried beans in a crockpot. I've always meant to try them in the stove but never have. I'm not a bean expert, but isn't 325 a bit low for only five hours of cooking dried beans? I could be wrong. That's too bad, pso. It does look like a good bean recipe - if the beans got cooked.

Flavor was there. I just wish the beans were cooked through too! Don't you boil your beans first before they go in the crock?
I know baked beans are supposed to be baked long and slow. I've had a mixed bag of results when I do baked bean recipes. Even had one that used 200F. It didn't turn out either.
Some say salt prevents the beans from softening. Others say it's not so and it's the acid that prevents the cooking. I just don't know yet. If it's the salt, this is one recipe that proves it.

I've always just soaked my beans overnight, pso.
I've read conflicting stuff on the salt myself. I've never salted. I always add salt later. I really have wanted to try baked beans cooked long and slow in the oven. I think I even have a couple bookmarked. But, now that summer is nearly here, it won't be happening anytime soon.

I always salt the beans later in cooking too. I do know that older beans take longer to cook than newer. I had a bag of black beans I found in my pantry from who know when and they took about 2 hours longer than usual! Anyway, sorry you wasted your ingredients points :(

When I cook beans in my crockpot, it takes 11 to 12 hours on low. Not sure how dry beans could be done in five hours. I didn't know that older beans take longer to cook, ml2c. Learn something new here all the time. :)

Well not sure how true it is but I was told that and found 2 times using old beans it's true to me! When I cook black beans on the stove I bring them to a boil then light simmer for about 3 hours tops with a lid and they are ready. Haven't done in the crock yet but I do want to try!
