Mayo Free Cilantro Chicken Salad

    I absolutely did not miss the mayo in this and that makes me so happy!! I will for now on make my chicken salad with Greek yogurt! Good stuff!! It was fun just cutting away at the bell pepper cup with each bite of salad....used left over wing meat from the honey kiss wings.

    I've been shying away from mayonnaise lately and just tried Greek yogurt last month and really liked it. I think I'd like to try that dressing on something cilantro free, although the picture is very, very pretty and colorful.

I had about 6 or 7 left over so it was the perfect amount of chicken meat to get 2 of those bells made up... although not sure why the serving in the recipe says 1 when your using that amount of ingredients? Maybe they eat like Mr P!! I know you guys hate cilantro, but parsley would sub out great in this....

    As for cilantro, "Hate" is such a strong word. I dont wish it off the face of the earth. Not like mosquitoes or fleas and all those other itchy bugs. Just off my plate : )
