    Mexican Salad Dressing

    Perfect on romaine lettuce as a side to my Baked Chimichangas. I resized the recipe and didn't want to use the blender for such a small amount. So I used onion powder and just whisked all the ingredients together. That worked just fine.

    Jkirk suggested using this as a cole slaw dressing. I agree and I also think that with more mayo to make it thicker, it would be a great dip for raw veggies or even as a sauce drizzled over cooked veggies.

    I would think so - pesto is made in a food processor so why not this dressing? Maybe you need to run the food processor a little longer because wouldn't blender blades spin faster?

    Never seen a Mexican salad dressing!!! I wouldn't waste washing my blender either...I like your idea with the onion powder although it wouldn't be bad to just finely chop an onion to use... such pretty pics!

    I'm actually not sure why the name "Mexican" - it doesn't have any of the flavors that I associate with that cuisine. I guess maybe because of the Mexican cheese that the recipe called for? At any rate, it was really good. I think the texture of the finely chopped onion is a good idea.

    Yep, natural light's my friend. :) Thanks mr p. That colorful fabric in the background of the pic? That's actually the skirt of a Mexican doll. A friend of mine from Mexico gave it to me and told me that the pattern in the fabric was typical of what would be worn at local festivals. I thought it would bring a little "Mexico" to the pic.
