  Can't eliminate the oil altogether. Use some for frying.
  My chops were one inch and was plenty of time at 7 minutes to cook. There was some scorching of the brown sugar in the pan and on the edge but the chops were not crusty.
  Remember to cut a couple of slits in the fat of the chops to keep them from cupping while frying.
  Paired chops with Mashed Maple Sweet Potatoes
