How to make it

  • In a small bowl, combine the brown sugar, salt, mesquite seasoning, and pepper. Gradually stir in 1 tablespoon oil until crumbly. Rub over both sides of pork chops.
  • In a large skillet, cook pork in remaining oil over medium heat for 7-8 minutes on each side or until juices run clear.
  • It was a yummy meal with smashed Yukon Gold potatoes and a balsamic marinated tomato salad.

    Can't eliminate the oil altogether. Use some for frying.
    My chops were one inch and was plenty of time at 7 minutes to cook. There was some scorching of the brown sugar in the pan and on the edge but the chops were not crusty.
    Remember to cut a couple of slits in the fat of the chops to keep them from cupping while frying.

    The chops look amazing I love to cook my meats on the smoker but sometime just don't have the hours it takes to slow cook. I'll Have to give this recipe a try....

    I always reach for the liquid mesquite smoke when the occasion arises. I have both mesquite and hickory smoke flavorings and the mesquite sees more action.
    You are talking about liquid smoke flavor aren't you, or is it a dry seasoning to which you are referring?
