Mashed Maple Sweet Potatoes Recipe

Ingredients

1 extra large can or 1 latge + 1 small can sweet potatoes,drained and mashed

3 Tbs. maple syrup

1/4 C. milk

1/4 C. melted butter

1/2 C. brown sugar

2 tsp. cinnamon

1/4 tsp. nutmeg

1 C. mini marshmallows

Directions

Preheat oven to 350°

Combine all ingredients in a large mixing bowl and mix well.

Spoon into a large casserole dish sprayed with cooking spray.

Bake 30 minutes until crusty on top.

Remove from oven and add more marshmallows to top and return to oven watching closely until marshmallows melt.

My mother in law makes this every year for a couple holidays. Last Thanksgiving I had my side of the family over and they just loved it. What I found so funny was they had never had it before. I thought this was an old recipe everyone had heard of. This really gets kids to eat their veggies! I just founf instant sweet potatoes at the store, tried them not to good, they also have russet potatoes in them.
