Nothing Fancy Leftover Chili Pie

I came across this the day I was gonna make a big pot of chili so I just had to try it! LOVED IT! It's not quite like the ones you get from the ball park. When you bake it the frito's in the bottom soak up the extra juice (which means you really need the V8 so don't skip it) and just gives it this great texture along with the crunchy one's on top. I used a mix of colby jack cheese and cheddar. Served it with a side salad and we had the perfect "leftovers" dinner! Thanks again Keni! Yes but what if someone thought hhhmmm....I would love to bake a chili pie, and didn't know about the V8 or other moisture addition? They would have a dry lump of corn chips and chili right? So good thing you posted this cause I woulda never caught it ;)
