Ingredients

How to make it

  • Lightly spray 10inch deep dish pie plate.
  • Combine chili and cocktail juice
  • Layer bottom with about 1/2 bag of corn chips
  • spread with chili
  • sprinkle with shredded cheese
  • top with more corn chips(you probably won't use the whole bag :)
  • Bake at 400 for about 20-30 minutes until heated through and cheese is melted, well.
  • Let rest about 5 minutes before serving.
  • Add garnishes at serving.
  • **some notes...this doesn't cut up pretty, so it serves sloppy, but it's not meant to be gourmet. ;) Also, the extra juice helps not only add flavor, but also helps to soak into the chips and form just a bit more of a softer "crust" on the bottom.

We REALLY enjoyed this! Used up my leftover chili perfectly so no complaint here ;) Topped mine with green onions and served sour cream on the side! It's a keeper! More info -->Nothing Fancy Leftover Chili Pie

This is the way I like it... the simpler the better. And Ma loves corn chips on her chili and thick soups.
