Nothing Fancy Leftover Chili Pie

- 3-4 cups left over cooked chili shopping list
- 1/2 cup spicy V8 cocktail juice(if your chili is soupy, already, then just omit this) shopping list
- 1 bag regular sized corn chips shopping list
- 8oz mild cheddar, colby or cojack cheese, shredded shopping list
- green onions, sliced jalapenos, sour cream, cilantro, to garnish(optional) shopping list
How to make it
- Lightly spray 10inch deep dish pie plate.
- Combine chili and cocktail juice
- Layer bottom with about 1/2 bag of corn chips
- spread with chili
- sprinkle with shredded cheese
- top with more corn chips(you probably won't use the whole bag :)
- Bake at 400 for about 20-30 minutes until heated through and cheese is melted, well.
- Let rest about 5 minutes before serving.
- Add garnishes at serving.
- **some notes...this doesn't cut up pretty, so it serves sloppy, but it's not meant to be gourmet. ;) Also, the extra juice helps not only add flavor, but also helps to soak into the chips and form just a bit more of a softer "crust" on the bottom.

We REALLY enjoyed this! Used up my leftover chili perfectly so no complaint here ;) Topped mine with green onions and served sour cream on the side! It's a keeper! More info -->more
