Light, crispy, delicious waffles - I will make these again and again. I used an immersion blender to mix the batter so the oats (I used Old Fashioned Oats, not Quick Cooking Oats) would be ground up well in the batter...didn't have bacon fat, so used melted butter. They came out very crispy and light, and made a LOT of waffles (6 batches on a 4 square waffle iron). The leftovers froze beautifully and when popped in the toaster to re-heat, came out just as light and crispy as the fresh batch. Kids and adults agreed these were very good.
