Ingredients

How to make it

  • Put the dry ingredients in a bowl.
  • Make a well in the center.
  • Break the eggs, put in the well.
  • Top with melted bacon fat (not hot) and then the buttermilk.
  • Stir together.
  • Batter will be a thick pouring consistency.
  • Let stand 20-30 minutes to allow the bp to do its' work.
  • The resting time will also create a thicker batter.
  • The batter should nearly double.
  • Preheat the waffle iron while the batter rests.
  • Brush lightly with oil and bake waffles to a light golden brown according to the wafflemaker instructions.
  • Keep in a low 200 degree oven until all are done.
  • Serve with real maple syrup or lightly buttered and sprinkled with sugar crystals.

    I don't know how I missed this recipe, cause I'm a waffle monster, I have a recipe for cornmeal in pancakes and I love it, can't wait to try these babies!!!!

    Notcho, I made these for my grandkids this weekend, and you were so right - light, crisp, DELICIOUS waffles. I did have to add another cup of flour, as 1 cup didn't make my batter thick enough...not sure why, but I added the additional cup and it worked great. I used an immersion blender so the oats were ground up finely in the batter. My waffle iron makes a set of 4 small waffle squares, and this recipe made 24 small squares (or 6 batches)...the leftovers were popped in the freezer for another day...they toasted up just as crisp and light and wonderful as the fresh batch, and we all loved these waffles. THANK YOU notcho, for yet another winning recipe...I have to say I've never seen a recipe for waffles with cornmeal, and I will be sure I never LOSE this recipe...highly recommended by grandkids and adults!
    Ps - I had no bacon fat, so used melted butter
