If you skipped the bacon fat, and I don't....you could almost call these healthy. Clipped from a women's magazine, mid 1950's. The amount of baking powder is not an error, it is needed to create the crisp, tender waffle.

Notcho, I made these for my grandkids this weekend, and you were so right - light, crisp, DELICIOUS waffles. I did have to add another cup of flour, as 1 cup didn't make my batter thick enough...not sure why, but I added the additional cup and it worked great. I used an immersion blender so the oats were ground up finely in the batter. My waffle iron makes a set of 4 small waffle squares, and this recipe made 24 small squares (or 6 batches)...the leftovers were popped in the freezer for another day...they toasted up just as crisp and light and wonderful as the fresh batch, and we all loved these waffles. THANK YOU notcho, for yet another winning recipe...I have to say I've never seen a recipe for waffles with cornmeal, and I will be sure I never LOSE this recipe...highly recommended by grandkids and adults!
Ps - I had no bacon fat, so used melted butter
