    A nice orange taste. I didn't add nuts because I'm one of those people who doesn't like nuts in bread or cookies. My loaf was not done at 60 minutes but 10 more minutes finished it up. Its kind of crumbling when I slice it and hope its due to it still being warm although its cooled for 1/2 hour now. Still - its very tasty. I couldn't find a 10 oz jar of marmalade - only 18 oz. I figured 10 oz was just a bit over 3/4 of a cup so that's what I did. Didn't realize jellies and such are sold by weight. Never bothered to look!

    These distributors are crafty. They sell by weight or volume and you have to be on the watch to get the right amount of the product. Sometimes the things you think should be sold by weight are really by volume.

    I think the extra 10 minutes I needed made the crust a bit hard. So, when I cut into it, I have to use a bit of pressure to break it. Then it kind of crumbles. The crust is good though! Its sweet somehow. Perhaps the nuts would get the loaf done at 60 minutes. Maybe they heat up inside and help cook it. I don't know. I just know I don't like nuts in my bread. :-P
    I did put some butter on one piece, Good4U. It was very good! :)

    Did you incorporate the flour well? A little bit of gluten is necessary to hold the loaf together.

    I did, pso. At least I think I did. I scraped around and made sure there was none on the bottom of the bowl and stirred it some more after mixing with the electric mixer. Do you think the lack of nuts could have made the difference?

    If anything the nuts should tend to make it more crumbly.

    Oh, good! I'd be happy to hear someone else's results. I'm still thinking that perhaps the extra 10 minutes was the problem. Or maybe its something silly like my bread knife needs sharpening.

Which leads to another question. I notice many recipes say not to over mix/blend. Does over mixing something mess it up??

    Well, its kind of hard to beat butter and sugar together really well without a mixer. I'd highly recommend one. They aren't that expensive. My mother gave me mine when I moved out at 18 and I still have the same one. So they last forever. :-P
