    I made this yesterday. Was anyone else having problems with this site yesterday? I couldn't post and had a heck of a time adding my rating to this recipe.
    Anyway - this is a good rub. My baking powder had aluminum in it so I made my own. The cook time was a bit long for my pieces of chicken. The thigh bone fell out when I picked a quarter up. Tasty though but I would check the chicken at 2 hours as it may need less time than posted.

    Awesome photo! This is some of the best fried chicken I've seen. It's making me hungry! Glad you pointed out the cook time. 2hrs seems like a long time even at the reduced temp. As far as website problems, I know someone else was saying they couldn't get a thread started. Hope it's just a temporary issue.

    Thank you, Bakerme. There are quite a few recipes on the internet for baking powder. Its pretty simple - two teaspoons of cream of tartar mixed with one teaspoon of baking soda. You can also add one teaspoon of cornstarch if you aren't going to use it all right away and want to store it.

    I have never seen Rumford in the stores, but have been buying Argo brand (the same people that make cornstarch) aluminum-free and have good luck with it. It's in a blue and white plastic container in the baking aisle with the other baking powders.
