Pesto Pizza English Muffin

  Was looking for something easy for breakfast and I came across this. I wouldn't think of this so much as a pizza without any red sauce or pepperoni, but it was pretty tasty and a good way to use up some homemade pesto! Used a sprouted wheat English muffin and I went ahead and broiled it after a couple of minutes in the oven to get some bubbling on the cheese. I think I overdid it a bit, it got pretty dark, but didn't have any burnt taste to it. On the second half I added some sliced tomatoes which I think added some needed moisture. Good though for a quick snack or light meal :)

  Lol I should have verified, the cheese was perfect, the English muffin is what got a little dark :)
