Pleclare's Deep Dish Mexican Salad

    I made Pat's Deep Dish Mexican Salad last night along with some Shishkebobs that I had painted with a Tequila Habanero BBQ sauce. It was fantastic! I will totally add this recipe into our summer Pasta Salad rotation!
    I used wholewheat penne instead of the corkscrew pasta just as that's what I had on hand. One lime seemed to give me enough to make 1/4 cup of juice and 1 tsp. zest. The dressing is really, really nice and flavourful yet delicate. A really nice combination with the Dijon mustard and honey, cumin and lime. It's a very pretty salad too and a whole lot going on....beans and corn and pasta and lettuce and then tortilla chips as a nice crunchy garnish.
