Deep Dish Mexican Salad

- 8 ox corkscrew pasta shopping list
- 3 limes,zested and juiced shopping list
- 1/4 c vegetable oil shopping list
- 1/4 c fresh cilantro shopping list
- 1 Tb chopped garlic shopping list
- 2 c tortilla chips shopping list
- 2 tsp ea.Dijon mustard and honey shopping list
- 1/2 tsp ground cumin shopping list
- 6 c chopped romaine shopping list
- 2 lg. tomatoes,chopped shopping list
- 1 c each canned black beans and corn kernals shopping list
- 1/2 c ea. chopped red onions,sliced black olives,and shredded Mexican blend cheese shopping list
- 1 small fresh jalapeno pepper,sliced shopping list
How to make it
- Cook past according to directions.Drain,rinse in cold water.
- In bowl,whisk together 1/4 c lime juice,1 tso lime zest,oil,cilantro garlic,Dijon,mustard,honey and cumin. Season with salt and gr. blk pepper,if desired. In seperate bowl,gently toss pasta with 1/2 dressing mixture.
- In large serving bowl,layer lettuce,tomatoes,pasta,beans,corn,red onions,olives,cheese and jalapeno pepper as desired. Drizzle with remaining dressing.
- Arrange tortilla chips around top of bowl. Garnish with fresh cilantro ,if desired...
