PLeClares Turkey Meatball and Escarole Soup

    I made this today and it came out fabulously. Actually I made up the meatball mix the day before and let it chill in the fridge over night. This made shaping the meatballs very easy.

    I used endive as escarole was not available but I feel certain that this is a suitbble substiute as Pat indicated that any firm green can be used in the soup.

    I cooked it in the crockpot and let the broth and carrots warm up a bit before sliding in the meatballs. The meatballs sank to the bottom out of sight.

    I then chopped up the endive and put it on top of the mix. I pressed the endive into the broth rather than doing a big stir in. I didn't want the meatballs to break up and make a mess. I came back several times and repeated this during the day so that the greens cooked evenly.

    You will know the soup is ready when the meatballs float to the top. Really a very yummy and comforting soup. Thanks Pat! Picture posted.
